In our home, avocado toast is a reigning champion. Imagine a crispy slice of toasted rye bread (yes we use rye bread, but you do you) adorned with creamy avocado, a perfectly fried egg, and vibrant green asparagus. We always opt for rye bread because it adds good taste and a nice crunch that takes this dish to the next level. All you need are avocados, eggs, some arugula (or any salat you prefer) and green asparagus. For an extra zing, I sometimes add a touch of Sriracha mayo—because why not?
This breakfast always kick-starts my day in the best way possible. It’s satisfyingly filling without being overly indulgent, making it a healthy choice to start your morning.

2. Banana pancakes with Topping
Alright, another great breakfast idéer, is banana pancakes. They’re so good you might want to make an extra large batch, ensuring you have some for the next day. You can even freeze individual portions for a quick and delicious breakfast or snack, without the worry of leftovers going to waste.
There are countless banana pancake recipes out there, so find one that suits your taste. I like to make mine without sugar and small and fluffy, then top them with creamy skyr and a generous amount of chopped fruit, like bananas and berries.
This breakfast is a real winner—it’s healthier than many other options (depending on your recipe) and versatile enough to last several days. Preparing ahead can save you time and add a bit of structure to your weekend. And let’s be honest, they taste absolutely amazing.
3. Muesli Roll with Cheese, Bresaola, and Melon
A muesli roll with cheese and bresaola hardly need much explanation. It’s simple, it’s a bit more special than a weekday breakfast, and you can make it with any cheese or toppings you like. My favourite combo, is a slice of sharp cheese topped with one or two slices of bresaola. It’s always a treat to have a few slices of melon on the side. We can recommend Cantaloupe.
As mentioned, you can make this breakfast in as many variations as you like. This is our favourite—so far.
4. Scrambled Eggs and Turkey Bacon: A Hearty Weekend Delight
Our third weekend breakfast idea—what a mouthful—is scrambled eggs with turkey bacon and delicious sides. I often dice tomatoes and red bell peppers and sauté them in a pan. Feel free to add your favourite spices to give it a new twist. I don’t have a set list of spices for this dish, and to be honest, my partner usually handles this part. A little bit of everything goes in, with just the right amount of spontaneity (and of course, some thought), and it always turns out delicious.
This combo is super tasty with fluffy scrambled eggs and turkey bacon on the side. We almost always opt for turkey bacon because it tastes a lot like the bacon we all know and love, but with less fat.
Extra tip: You can also grab a roll or any type of bread, and create a wonderful sandwich with these ingredients.
5. Yogurt with All-Bran and Topping.
The fifth and final idea for now, is yogurt with All-Bran and berries and/or fruit pieces. I’ve grown quite fond of plant-based yogurt with blueberry flavor, but you can use any yogurt. All-Bran is high in fiber, good for the tummy, and I find that it pairs well with the plant-based yogurt. To make the experience even better, I like to add banana slices and fresh blueberries. It’s a nourishing breakfast that gives me a great start to the day, and once again – it tastes delicious.
